Bibi’s Bites – Mushroom cream soup

Today’s recipe is the world’s easiest fancy soup. Sounds good eh? And it tastes good,
too! With only 30 minutes of prep time, mushroom cream soup is a delightful addition to any meal would it be a family meal or an elegant dinner party.

Ingredients:

All of these can easily be found in most grocery store in Hungary
2 tablespoons of unsalted butter (vaj)
0.5 kg of any mushrooms you like (I prefer white champignons and Portobello
mushrooms) chopped (gomba)
One onion chopped (voroshagyma)
2 liters of chicken broth or three cubes of chicken broth for 2 liters of water (csirke alaplé)
3 tablespoons of flour (liszt)
2 cups of heavy cream (or liquid whipped cream) (fozotejszin)
Thyme – One tbsp chopped fresh thyme or 1 teaspoon dried thyme (kakukkfu)
1 tablespoon of Worcestershire sauce (optional)
Black pepper and salt (fekete bors es so)

Instructions:

Melt butter in a large saucepan over medium to high heat. Add chopped onion,
mushrooms and thyme. Sauté 7-10 minutes until golden. Mushrooms tend to release a lot of liquid, so cook it until it evaporates. Add salt and pepper.

In a large pot, bring chicken broth to boil and reduce to simmer. Add onions and
mushrooms and cook for 10 minutes. Slowly add cream and keep stirring for 3 minutes.
Mix flour with cold water in a cup (to reach creamy liquidy consistency) and add to
the soup while stirring. Stir until soup returns to simmer and thickens slightly. Add a
tablespoon of Worcestershire sauce.

Turn off the heat and your soup is ready. Personally I prefer to soup blended, but it’s really up to you.

When it comes to cooking I believe that a recipe is nothing more than a guideline.

You take the frame and improvise. Words on paper do not have a taste, but your creation will.

So be bold and get creative – make the recipe your own by adding your favourite ingredients and trying new ways to improve or rather make the recipe your own!
