Bibi’s Bites - Ruccola Salad

Editor’s note: Bibi sent this to me while Budapest was still covered in a thick blanket of snow, the daily high was -7°C and strawberries were an uncommon treat. Now that Spring is around the corner they are available pretty much everywhere in Budapest.

I was doing my regular Saturday grocery shopping, when I came across a rare (I thought) item for winter– strawberries. Fresh and beautiful they were (and cheap, at 359 HUF a package at Auchan). So, naturally I bought it - Budapest being covered in snow was wonderful, but I wanted sun and summer. And there I thought of one of my favourite salad recipes. Take strawberries, top them up with ruccola and a couple of other things and there you have it. The bitterness of the ruccola is diluted by the strawberries and apples, while pine nuts and dressing add a delicious flavour, making a healthy, beautiful starter, sophisticated, yet unpretentious, bright, colourful and yum-yum-yummy.

Ingredients:

Salad:
One package of ruccola (80 gr)
3 strawberries (eper)
Half an apple (alma)
1 tablespoon of pine nuts (fenyőmag)

Dressing:
½ teaspoon of sugar (cukor)
1 teaspoon of balsamic vinegar (balzsamecet)
2 teaspoon of olive oil (olívaolaj)
1 teaspoon of regular white vinegar (I use 10%) (ételecet)

 

 

 

 

 

Cut strawberries, slice apples and mix with the ruccola. In a separate dish add the ingredients for the dressing and mix well. Pour dressing over the salad and sprinkle with pine nuts. Serve and enjoy! Egészségedre!
