Bibi’s Bites - Wonder Muffins

We have all been in that situation, when your mother calls and tells you that she is coming by in half an hour, or friends stop by to drop of your long-forgotten book and end up staying for over two hours or the kids want something yummy ‘now!’ just as you get comfortable on the couch with a book you have been planning to read for an eternity. And when you open your fridge the prospect of caviar-on-toast is less than likely. Solution? Here it is, my wonder recipe: banana muffins. It is one of my favourite recipes, as it is simple, easy and not greasy. It takes no time to make… well, almost no time. According to my daughter Hannah - the most severe critic when it comes to my cooking - these muffins are “blilliant”.

Ingredients

All of these can easily be found in any grocery store in Hungary

3 large ripe mashed bananas (banán)
1/3 cup (75 g) of unsalted butter, melted (vaj)
2 eggs (tojás)
1/2 cup (100 g) of sugar (sütőcukor)
1 teaspoon of vanilla extract (vanília aroma)
1 1/2 cups (150 g) of flour (buza finomliszt)
1/2 teaspoon of salt (só)
1 teaspoon of baking powder (sütőpor)
1 teaspoon of baking soda (étkezési szódabikarbóna)

Mix the last four ingredients in a bowl. Mix the first five ingredients in a separate bowl and then add the dry mix in.

The next step is optional and, no question, my favourite: add whatever you would want to the muffin batter. I like adding raisins and poppy seeds, nutmeg and cinnamon, you can also add lemon juice, apples, cranberries or blueberries - anything really!

Preheat the oven to 350° F (180° C, Gas Mark 4). Use a muffin tray and muffin papers (can be purchased in most large supermarkets, like Tesco, CBA, Auchan, IKEA - although IKEA ones are different in size). Bake for 20-25 minutes or so (until golden and toothpick comes out clean). Yields 12-15 muffins.

When you take them out of the oven lift the muffins (careful, very hot!) and leave them tilted on the muffin tray until they cool down.

The next step is the most fun – enjoy the freshly baked muffins with hot tea. Life’s good.

It’s a great recipe! I have a similar one, sometime I make it as a marble cake too. If you want to try healthier variant you can replace 1/3 of white flour with spelt flour (tönkölybúza liszt), sugar with e.g. agave syrup and baking powder with wine stone baking powder (sold in DM).

Hi! By any chance do you have a Hungarian-ized recipe for that good old Canadian staple, nanaimo bars? I’d love to make them for Canada Day, but I can’t imagine custard powder and graham cracker crumbs are too easy to come by here (I found a box of Nabisco graham wafers at Culinaris when I was trying to make s’mores, but at almost 3000 HUF for the box, I opted for Digestive biscuits instead!)
